India is a land of colours and music, songs and dances. Of history, tradition and art that dates back thousands of years.
The basic art of Indian cooking lies in the careful blending of different spices to yield subtle variations in flavours. Curries form the mainstay of the Indian cuisine. A curry is basically a casserole of beef, poultry, lamb or vegetables in sauce, the flavour of which is created by the combination of the spices added during cooking.
The origin of curries can be traced back many centuries, when there were no means of keeping perishable food fresh. Lamb, poultry and fish rapidly acquired a taint in the hot ,humid Indian climate. Spices were therefore added to give flavour of the main ingredient. Generally the hotter the climate, the hotter the curry was made. Regional differences in religion, culture and local produce have also influenced eating habits to yield a diversity of exotic tasty dishes.
The JEWEL OF INDIA offers food from India based on selected recipes from some of the master chefs of the Indian gourmet cuisine. It is our hope that you will relish these selected recipes. Similarly, we have taken care that our food is authentic. We use exotic Indian spices for their special flavour and aroma. We do not recommend that the level of spice in any dish be altered.
